Alaya Resort Ubud Pays Tribute to Anthony Bourdain

A Culinary Night Market Experience

The tragic suicide of Anthony Bourdain ripped a hole through the global food community, revealing how even the most successful and admired of stars may be wrestling with insurmountable internal demons. As a tribute to his life and to draw attention to mental-health issues, Hatten Wines together with the Indonesian Chef Association and several Celebrity Chefs hosted a Culinary Night Market Experience. It took place at Hatten Wines, Sanur, Bali on 29th August 2018 from 4 pm – 10 pm. Inspired by Anthony Bourdain’s illustrious career, the event was a fund raiser with all proceeds being be donated to Lombok Aid and The Sumba Hospitality Foundation.

This exclusive charity event was presented by Chef Chris Salans from Mozaic restaurant in collaboration with a number of Indonesian Celebrity Chefs such as Chef Marinka, Chef Ibu Sisca, and Chef Ragil Wibowo. Other top names on the local culinary scene had been on hand to liven things up. The line-up included Chef Mandif Waroka, Chef Bayu Retno, Chef Davin, Chef Kleran Morland, Chef Dean Keddell, Chef Gustavo, Chef Jethro and Braden, Chef Wayan, Chef Bernadette, Chef Ray and Elke, and Chef Patrick. Our very own Food & Beverage Advisor, Chef Henry Alexie Bloem was lending a helping hand. Each participating chef cooked a signature dish in remembrance of Anthony Bourdain, who was a big fan of simple street food.

As a part of our Alaya Cares initiative, we were extremely proud to have Chef Bloem, who is also the current President of the Indonesian Chef Association, took part in this worthy cause. It had the full support of Alaya Hotels & Resorts and was directly related to our ongoing Tri Hita Karana program, which encourages all employees to contribute and give back to society.

During this vibrant marketplace event, a talented team representing Manisan Bali and Petani Restaurant at Alaya Resort Ubud prepared a local specialty known as “Sate Plecing Kakul”. Curated by Chef Bloem, this traditional Balinese dish of grilled rice field escargot skewers came served with a spicy chilli and shrimp paste sambal for just IDR 50K per portion.
